This one’s got serious diner vibes with a twist — thin, crispy-edged beef patties, melty cheese, and those 🔥 sweet pickles to cut through the richness.


🧂 Ingredients (for 2 burgers)

🔥 For the Smash Patties:

  • 1/2 lb ground beef (80/20 is ideal for juicy burgers)

  • Salt + pepper

  • Neutral oil or butter (for the skillet)

🧀 Toppings:

  • 4–6 slices Sweet Fire Pickles

  • 2 slices American cheese (or cheddar if you want a sharper bite)

  • Burger buns, toasted (brioche or potato buns are 👌)

  • Optional extras:

    • Thinly sliced onion (griddled or raw)

    • Spicy mayo or garlic aioli

    • Lettuce or shredded cabbage for crunch


🍳 Instructions

🔥 Smash Time:

  1. Preheat a cast iron skillet or griddle over high heat until it’s ripping hot.

  2. Divide beef into 2 loose balls (don’t pack them tight).

  3. Add a tiny bit of oil to the skillet.

  4. Place beef ball in the skillet and smash it flat with a spatula (use parchment or foil between spatula and beef if needed). Get it THIN.

  5. Season with salt + pepper.

  6. Let it cook undisturbed until edges are crispy and browned (about 1.5–2 min).

  7. Flip, add cheese, and cook another 1 minute.


🧅 Optional Griddled Onions:

  • Before the burger, toss some thinly sliced onions on the hot skillet with a little oil and cook until soft and golden.


🍔 Build It:

  1. Toast buns in butter until golden.

  2. Add a smear of spicy mayo or aioli (optional but recommended).

  3. Lay down the cheeseburger patty, top with Sweet Fire Pickles.

  4. Add onions, lettuce, or your favorite extras.

🧂 Ingredients (Makes 6 sliders)

🥩 For the Sliders:

  • 1 lb smoked or slow-cooked brisket, sliced or chopped

  • Slider buns (King’s Hawaiian or brioche work beautifully)

  • BBQ sauce (optional, something smoky or tangy)

🍍 For the Pineapple Sweet Fire Pickle Slaw:

  • 1 cup shredded cabbage (green or a slaw mix)

  • 1/2 cup Pineapple Sweet Fire Pickles, chopped (plus a splash of the pickle juice)

  • 1/4 cup fresh pineapple, chopped (optional, but highly recommended)

  • 1–2 tbsp mayo (or Greek yogurt for a lighter touch)

  • 1 tsp honey or agave

  • Salt + pepper to taste


🍳 Instructions

1. Make the Slaw:
