Quick & Easy Garlic Scape Pesto (Ready in About 5 Minutes)
- Cut the garlic scapes into roughly 1-inch sections and place them into a food processor along with the cashews. Blend for about 30 seconds until the mixture starts to break down.

3. While continuing to pulse, slowly pour in the olive oil. Keep blending another 20 to 30 pulses until the pesto reaches a smooth, spreadable consistency like the one shown in the photos.
4. Transfer to a sealed container, store in the refrigerator, and enjoy on pasta, sandwiches, crackers, or fresh vegetables!
