Fresh Garlic Lemon Herb Chicken & Vegetables
- In a bowl, whisk together 3 Tbsp BJ Fresh Garlic Extra Virgin Olive Oil, 4 minced garlic cloves, lemon zest, lemon juice, 1 tsp oregano, 1 tsp Italian seasoning, ½ tsp salt, and ½ tsp black pepper.
- Place 4 boneless chicken breasts or thighs in a large bowl or resealable bag.
- Pour half of the marinade over the chicken and toss to coat.
- Let the chicken marinate for at least 30 minutes, or up to 4 hours.
- Preheat oven to 425°F.
- Place mixed vegetables on a large baking sheet. Good options are bell peppers, zucchini, asparagus, red onion, and cherry tomatoes.
- Toss the vegetables with the remaining marinade.
- Add the marinated chicken to the baking sheet, placing it among the vegetables.
- Roast for 20–25 minutes, or until the chicken is fully cooked and the vegetables are tender and lightly browned.
- Garnish with fresh parsley and serve.
Tip: Drizzle a little extra BJ Fresh Garlic Olive Oil over the finished dish for extra garlic flavor.
🍝 BJ Gourmet Fresh Garlic Pasta (Aglio e Olio Vibes)
This is a fast, minimalist, flavor-bomb pasta that tastes like you know what you’re doing in the kitchen. Perfect for weeknights or date night.
🧂 Ingredients (Serves 2)
- 6 oz spaghetti or linguine
- 3–4 tbsp BJ Gourmet Fresh Garlic EVOO
- 1/4 tsp red pepper flakes (optional but recommended)
- Salt, to taste
- Freshly cracked black pepper
- 1–2 tbsp pasta water (to help coat the noodles)
- 2 tbsp chopped fresh parsley
- Freshly grated Parmesan or Pecorino (optional but 🔥)
🍳 Instructions
- Boil pasta in salted water until just al dente. Save a little pasta water before draining.
- In a skillet over medium-low heat, add your garlic-infused olive oil. (If you used the quick-heat version with garlic slices, you can toss a few in too!)
- Add red pepper flakes (if using) and let them bloom for 30 seconds.
- Toss in the drained pasta, plus a splash (1–2 tbsp) of pasta water to help it coat and shine.
- Season with salt and pepper. Toss until glossy and well coated.
- Stir in fresh parsley and serve hot.
- Top with grated cheese if you want a rich, savory finish.
