Fresh Garlic Lemon Herb Chicken & Vegetables

  1. In a bowl, whisk together 3 Tbsp BJ Fresh Garlic Extra Virgin Olive Oil4 minced garlic cloveslemon zestlemon juice1 tsp oregano1 tsp Italian seasoning½ tsp salt, and ½ tsp black pepper.
  2. Place 4 boneless chicken breasts or thighs in a large bowl or resealable bag.
  3. Pour half of the marinade over the chicken and toss to coat.
  4. Let the chicken marinate for at least 30 minutes, or up to 4 hours.
  5. Preheat oven to 425°F.
  6. Place mixed vegetables on a large baking sheet. Good options are bell peppers, zucchini, asparagus, red onion, and cherry tomatoes.
  7. Toss the vegetables with the remaining marinade.
  8. Add the marinated chicken to the baking sheet, placing it among the vegetables.
  9. Roast for 20–25 minutes, or until the chicken is fully cooked and the vegetables are tender and lightly browned.
  10. Garnish with fresh parsley and serve.

Tip: Drizzle a little extra BJ Fresh Garlic Olive Oil over the finished dish for extra garlic flavor.


🍝 BJ Gourmet Fresh Garlic Pasta (Aglio e Olio Vibes)

This is a fast, minimalist, flavor-bomb pasta that tastes like you know what you’re doing in the kitchen. Perfect for weeknights or date night.


🧂 Ingredients (Serves 2)

  • 6 oz spaghetti or linguine
  • 3–4 tbsp BJ Gourmet Fresh Garlic EVOO
  • 1/4 tsp red pepper flakes (optional but recommended)
  • Salt, to taste
  • Freshly cracked black pepper
  • 1–2 tbsp pasta water (to help coat the noodles)
  • 2 tbsp chopped fresh parsley
  • Freshly grated Parmesan or Pecorino (optional but 🔥)

🍳 Instructions

  1. Boil pasta in salted water until just al dente. Save a little pasta water before draining.
  2. In a skillet over medium-low heat, add your garlic-infused olive oil. (If you used the quick-heat version with garlic slices, you can toss a few in too!)
  3. Add red pepper flakes (if using) and let them bloom for 30 seconds.
  4. Toss in the drained pasta, plus a splash (1–2 tbsp) of pasta water to help it coat and shine.
  5. Season with salt and pepper. Toss until glossy and well coated.
  6. Stir in fresh parsley and serve hot.
  7. Top with grated cheese if you want a rich, savory finish.
